High quality azuki beans are used for the best taste.
Akanemaru selects azuki beans based on the following four points: "good taste," "low pesticide use," "stable harvest," and "Erimo type*. At Akanemaru, we do our best to deliver the highest quality red bean paste by using azuki beans that are carefully selected not only for their origin but also for their variety and grade.
Not all of the azuki beans used at Akanemaru are of the "Erimo" variety.

Safety.
The beans used at Akanemaru are healthy beans with as low a level of pesticides as possible. All beans have been certified for pesticide residues. The beans also undergo a rigorous 14-step sorting process (link to sorting process) to prevent foreign substances from entering the beans. All lots are tested for pesticide residues. Only beans that have passed the tests are used. In addition, a person in charge of the quality control office conducts a bacteria test on all lots at the in-house laboratory. We have also installed metal detectors to prevent metal contamination.

Our special manufacturing method
Azuki beans, the main ingredient of red bean paste, are an agricultural crop, so the water absorption rate and other conditions vary from lot to lot. Therefore, it is necessary to adjust the boiling time little by little, which can be a hardship, but this is the part of the process where the craftsmanship of many years can be utilized, so I sharpen my senses and manufacture with all my heart.
We select and handle high-quality azuki beans from Japan and overseas.

At Akanemaru, we insist on using large, uniformly sized azuki beans. Large grains are a sign that the beans have matured sufficiently, and the azuki itself has a strong flavor. Also, when the grains are uniform in size, they can be boiled evenly, and the bean paste can be cooked with a uniform graininess.

Ensuring a safe and stable harvest
Akanemaru buys only from areas where a stable harvest can be expected. Since azuki is not an industrial product, there are inevitably variations in quality due to weather and other factors. However, in order to manufacture azuki under a certain standard, we mainly use azuki from Hokkaido, the U.S., and Canada, where a stable supply of quality azuki is available.

We are committed to low-pesticide cultivation.
Red beans are so susceptible to pests and diseases that they are said to grow well with pesticides. However, excessive use of pesticides can affect the taste. For this reason, Akanemaru makes every effort to procure azuki beans grown in Tokachi. As a result of our commitment to the quality of the beans, we also use azuki beans produced in the United States and Canada. North America, with its fertile soil and climate that is resistant to pests and diseases, is actually an ideal region for the growth of azuki beans. Among them, we select and use azuki beans from fields where pesticide spraying is less frequent.

Akanemaru is an anko (sweet bean paste) shop established in 1940.
The year 1940 was a time when the war was becoming more and more intense, sugar was being sold by the ticket system in May, and the procurement of raw materials was not easy. In the midst of this situation, all the employees worked together to protect the company and the factory with the desire to deliver delicious bean jam that would touch the hearts of Japanese people.
In the following years, Akanemaru added "Akanemaru Goshiki Dorayaki" (five-colored dorayaki), which uses the special bean jam, to its main products for business use, and has continued to grow as a food manufacturer.
In the future, we will continue to expand our sales channels, including overseas, and strive to make better products.
